it's a lot deeper than i can cover here, but one thing when it comes to keyboards, i'd definitely recommend getting mark levine's "the jazz piano book" and working through that systematically along with the listening recommendations.
production is a whole world unto itself - the best start is to really get into some of your favorite albums but from an objective and critical point of view - work out and break down how it was made, what instruments create what sounds, what harmonies and textures create what moods, how the arrangements are so critical to the overall affect of the music - and from there, apply some of those ideas in your own music making :)
